Our organic Tie Guan Yin oolong
Oolong is a fascinating style of tea that sits between green and black tea in its degree of oxidation. Our organically grown Tie Guan Yin oolong comes from Fujian province, China. Its carefully rolled leaves open as they infuse, releasing a complex aroma with softly vegetal, woody and sometimes marine notes.
Sometimes described as blue-green tea, oolong has its own rich traditions and is valued for the way its flavour evolves from one infusion to the next.
Brewing oolong
Steep the leaves in hot water for the recommended time. The rolled leaves gradually unfurl, leaving plenty of scope for several successive infusions. Try shorter steeps and observe how the aroma changes, or use a small teapot for a more traditional tasting session.
How oolong is made
Oolong leaves are partially oxidised, with the precise degree depending on the style the producer wishes to create. After withering and careful handling, the leaves are heated to stop oxidation, then shaped and dried. This technique produces a captivating range of floral, mineral, vegetal and toasted flavours. Oolong naturally contains caffeine.
