How should you store spices?

Keep spices in airtight jars or pouches, away from light, moisture and heat. A cool, dry kitchen cupboard is ideal. Whole spices usually retain their aroma longer than ground spices, so buying them whole and grinding them as needed can be a good option.

How long do spices keep?

Stored correctly, dried spices can remain usable for a long time, but their fragrance and flavour gradually fade. Many packs display a best-before date of up to around 36 months. If a spice barely releases any aroma when you smell it, it may be time to replace it. Always check its condition and storage history before use.

Which spices are essential in the kitchen?

Black pepper and salt are everyday staples. Cumin and cinnamon enrich dishes from many culinary traditions, while turmeric adds a vivid golden colour. Nutmeg lends a warm, gently sweet note to creamy dishes; vanilla, tonka and saffron bring something special to desserts and celebratory cooking. Rosemary, thyme and Herbes de Provence are wonderful for Mediterranean dishes.

Which variety of pepper should you choose?

Kampot pepper, grown in the Cambodian province of the same name, is prized by chefs for its distinctive fragrance and quality. It benefits from a protected geographical indication (PGI), recognising its origin and production tradition.
