What is special about tea?
Tea leaves naturally contain caffeine, L-theanine and plant polyphenols. The balance of these compounds, along with the way the leaves are processed and brewed, helps shape each tea's unique flavour and character.
What are the different types of tea?
Four major types are distinguished by how the leaves of Camellia sinensis are processed and oxidised: white tea, often gently withered and dried; green tea, in which oxidation is halted early; oolong, which is partially oxidised; and black tea, which is more extensively oxidised. Other styles, including yellow and post-fermented dark teas, add further variety to the world of tea.
Which tea should you try first?
It depends on your tastes. A delicate white or green tea is a good introduction to lighter flavours; Assam offers a rich, malty cup; and Japanese matcha brings a bold, distinctive umami character. Explore several styles to find your favourites.
