Organic whole tonka beans
Tonka beans are famous for their extraordinary fragrance, combining notes of vanilla, almond, caramel and warm hay. Our whole organic tonka beans come from Brazil and measure approximately 3–4 cm. They are available in packs of five for occasional use or in 100 g pouches for keen cooks; a small grater is included in the indicated packs.
Just a little freshly grated tonka is enough to bring a distinctive, luxurious aroma to a dessert.
Ideas for cooking
Grate very sparingly into custards, rice pudding, crème brûlée, ice cream, chocolate desserts, biscuits or cakes. Tonka's warm, almond-like aroma also works with pears, apples and coffee. Grating at the last moment helps preserve the fragrance.
Origin, storage and precautions
The seeds come from the fruit of the tonka tree, a tropical South American species. Store them in a dry, airtight container, away from light and heat. Use only very small culinary quantities: tonka beans naturally contain coumarin, for which food safety limits apply. Avoid high or medicinal doses.
